Sweet Potato Latkes
Organic Ingredients: I medium sweet potato 1 egg 1 teaspoon olive oil 1 teaspoon kale powder 1 teaspoon chili 2 cloves of garlic 2 tablespoons olive oil
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 cup flour
Sauce: 1 tablespoon raw honey 1/4 cup plain greek yogurt
green onion
Directions: 1. Peel and dice sweet potato and boil until easily poked with a fork 2. Peel garlic cloves and finely dice. Take the kosher salt and pour it on top of the diced garlic. Using the back of a fork mix and mash the garlic with the salt until in makes a coarse paste. In a large mixing bowl combine garlic and salt mixture with egg, olive oil, kale powder and chili powder.
3. Once sweet potato is tender, drain all the water and add the sweet potato to the spice mixture. With a potato mashed crush the sweet potato and combine with the spices. 4. Add the flour and stir until well combined it should be the consistency of thick drop biscuit batter. 5. Heat a small amount of coconut oil in a medium frying pan over medium high heat. Once pan is hot drop about 3 separate spoonfuls of batter into the pan and smooth each with the back of the spoon. 6. Fry on each side for approximately 4 minutes. Repeat until all the batter has been cooked. 7. Combine greek yogurt and honey.
8. Serve hot with a dollop of the yogurt sauce and garnish with chili powder and green onion.
